  • 1/2 teaspoon black salt (adjust to taste)
  • 1/2 teaspoon roasted cumin powder (optional)

Instructions:

1. Prepare Kokum Extract:

  • Rinse the dried kokum pieces under running water to remove any impurities.
  • In a bowl, soak the rinsed kokum in 4 cups of warm water for about 30-45 minutes.
  • This will help to extract the color and flavor from the kokum.

2. Strain the Mixture:

  • After soaking, use a strainer or muslin cloth to strain the kokum water into a pitcher, pressing the kokum pieces to extract as much liquid as possible.
  • Discard the solid kokum pieces.

3. Sweeten the Sherbet:

  • Add sugar to the kokum extract in the pitcher.
  • Stir well until the sugar dissolves completely.
  • You can adjust the sweetness according to your taste.

4. Season the Drink:

  • Add black salt and roasted cumin powder to the mixture.
  • Stir well to combine all the flavors.

5. Chill and Serve:

  • You can refrigerate the Kokum Sherbet for a couple of hours or serve it immediately over ice cubes.
  • Stir well before serving, as some ingredients may settle at the bottom.

6. Garnish: Pour the Kokum Sherbet into glasses and garnish with fresh mint leaves if desired.
