Here's a simple recipe to prepare Curd Rice:

Ingredients:

  • 1 cup cooked rice (preferably short-grain rice like Sona Masuri or any leftover rice)
  • 1 cup plain yogurt (curd), whisked until smooth
  • 1 tablespoon oil or ghee
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1-2 sprigs of fresh curry leaves
  • 1/2 inch piece of ginger, finely grated (optional)
  • 1/4 cup milk (optional, to adjust consistency)
  • Salt to taste

For Garnish (Optional):

  • Fresh coriander leaves, chopped
  • Pomegranate seeds
  • Grated carrots

Instructions:

  • Cook Rice:
    • Cook rice in a pot or rice cooker until it's soft and fluffy.
    • You can use freshly cooked rice or leftover rice that has cooled down.
  • Cool Rice: Transfer the cooked rice to a large mixing bowl and let it cool down to room temperature.
  • Prepare Yogurt Mixture:
    • In a separate bowl, whisk the plain yogurt until smooth.
    • You can add a little milk to the yogurt to make it creamy, if desired.
  • Mix Rice and Yogurt:
    • Once the rice has cooled, add the whisked yogurt to the rice.
    • Mix well until the rice is coated evenly with the yogurt mixture.
    • If the mixture is too thick, you can add a little milk to adjust the consistency.
  • Prepare Tempering:
    • Heat oil or ghee in a small pan over medium heat.
    • Add mustard seeds and let them splutter.
    • Add cumin seeds, chopped green chilies, grated ginger (if using) and curry leaves.
    • Sauté for a minute until aromatic.
  • Combine Tempering with Curd Rice:
    • Pour the tempering mixture over the curd rice mixture. Mix well to incorporate the flavors.
    • The tempering will add a delightful aroma and flavor to the dish.
  • Season with Salt:
    • Add salt to taste and mix well.
    • Adjust the seasoning as per your preference.
  • Garnish: Garnish Curd Rice with freshly chopped coriander leaves, pomegranate seeds, or grated carrots for a colorful presentation and added flavor.
  • Serve:
    • Serve Curd Rice chilled or at room temperature as a main dish or side dish.
    • It pairs well with pickles, papad, or any South Indian curry.

Tips:

  • Variations: You can add finely chopped cucumber, carrots, or even grapes to the Curd Rice for added texture and flavor.
  • Storage:
    • Curd Rice can be stored in the refrigerator for up to 1-2 days.
    • If it becomes too thick upon refrigeration, you can adjust the consistency by adding a little milk before serving.
