How to cook Lemon Rice at home - Lemon Rice Recipe

Here's a recipe for Lemon Rice, a tangy and flavorful rice dish:

Ingredients:

  • 1 cup basmati rice (or any long-grain rice)
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/4 cup peanuts
  • 2 green chilies, slit lengthwise
  • A pinch of asafoetida (hing)
  • 10-12 curry leaves
  • 1/4 teaspoon turmeric powder
  • Juice of 1 lemon
  • Salt to taste
  • Fresh coriander leaves for garnishing

Instructions:

  1. Cook the rice according to the package instructions and set it aside to cool. Ensure that the rice grains are separate and not mushy.
  2. Heat oil in a pan or kadai over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.
  3. Add peanuts and sauté until they turn golden brown.
  4. Add the slit green chilies, asafoetida and curry leaves. Sauté for a minute until fragrant.
  5. Add turmeric powder and mix well.
  6. Lower the heat and add the cooked rice to the pan. Mix gently to coat the rice with the spices.
  7. Squeeze the juice of one lemon over the rice. Add salt to taste. Mix well to combine all the flavors. Ensure that the lemon juice is evenly distributed.
  8. Cook the rice on low heat for 2-3 minutes, stirring gently, to allow the flavors to meld together.
  9. Garnish with fresh coriander leaves.

Your homemade Lemon Rice is now ready to be served. It can be enjoyed on its own or accompanied by raita or pickle. It's perfect for lunch, picnics, or as a side dish. Enjoy the tangy and refreshing flavors of this delightful rice dish.
