Kala Khatta Gola, also known as Kala Khatta Ice Gola or Black Currant Ice Gola, is a popular Indian street treat, especially during the summer. This refreshing dessert is made with crushed ice, flavored syrup, and a blend of tangy and spicy seasonings.

Here's how you can prepare Kala Khatta Gola at home:

Ingredients:

For the Kala Khatta Syrup:

  • 1 cup black currants (or use black currant syrup if available)
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black salt (kala namak)
  • 1/4 teaspoon chaat masala
  • 1/4 teaspoon roasted cumin powder
  • 1/4 teaspoon black pepper powder
  • A pinch of citric acid (optional, for extra tanginess)

For the Ice Gola:

  • Crushed ice (enough to fill several serving glasses or molds)
  • Kala khatta syrup (prepared as above)
  • Additional black salt, chaat masala, and lemon juice for sprinkling

Instructions:

  • Prepare the Kala Khatta Syrup:
    • If you have fresh black currants, blend them into a smooth puree. If you are using black currant syrup, you can skip this step.
    • In a saucepan, combine the black currant puree (or syrup), sugar, and water. Bring the mixture to a boil, stirring to dissolve the sugar.
    • Lower the heat and let it simmer for about 10-15 minutes until it thickens slightly.
    • Remove from heat and let it cool completely.
    • Once cooled, add lemon juice, black salt, chaat masala, roasted cumin powder, black pepper powder, and a pinch of citric acid if using. Mix well.
    • Strain the mixture to remove any solids and transfer the syrup to a clean bottle or jar. Refrigerate until ready to use.
  • Prepare the Ice Gola:
    • Crush ice using a food processor or blender until it resembles fine snow. Alternatively, you can use a manual ice crusher.
    • Take a serving glass or a mold and pack the crushed ice tightly into it to form a mound. You can also use an ice cream scoop to shape the ice into a ball (gola).
    • Drizzle the prepared kala khatta syrup generously over the crushed ice, ensuring it is well-coated and absorbs the syrup.
  • Season and Serve:
    • Sprinkle a little extra black salt, chaat masala, and a few drops of lemon juice over the top for added flavor.
    • Serve immediately with a stick or spoon to enjoy the refreshing and tangy treat.

Additional Tips:

  • Flavors: You can adjust the flavors of the kala khatta syrup by adding more or less of the spices and seasonings according to your taste.
  • Storage: The prepared kala khatta syrup can be stored in the refrigerator for up to a week.
  • Variations: You can also add other flavors or fruit syrups along with kala khatta syrup for a unique twist.
