Ingredients:

  • 1 kg tomatoes, ripe and juicy, roughly chopped
  • 1 onion, chopped

  • 1 tablespoon tomato paste (optional, for extra richness)
  • 1 teaspoon sugar (optional, to balance acidity)
  • 2 cups vegetable or chicken broth
  • Salt and pepper to taste

Instructions:

  • Prepare the Tomatoes:
    • If desired, blanch the tomatoes to remove the skin.
    • Boil water in a pot, score the tomatoes at the base and immerse them in boiling water for 30 seconds.
    • Transfer them to ice-cold water.
    • Peel the skin off and chop them roughly.
  • Sauté the Aromatics:
    • Heat olive oil or butter in a large pot over medium heat.
    • Add chopped onions and garlic.
    • Sauté until onions are translucent and garlic is fragrant, about 3-4 minutes.
  • Cook the Tomatoes:

  • Adjust Seasoning:
    • Return the blended soup to the pot (if using a blender) and place it over low heat.
    • Stir in sugar (if using), salt and pepper to taste.
    • Adjust the consistency by adding more broth if needed.
  • Add Cream (Optional):
    • If desired, stir in cream or milk to add a creamy texture to the soup.
    • Heat through gently, without boiling.
  • Serve:
    • Ladle the tomato soup into bowls.
    • Garnish with fresh basil leaves or dried basil.
