Ingredients:

  • 1 kg tomatoes, ripe and juicy, roughly chopped
  • 1 onion, chopped
  • 2-3 cloves garlic, minced
  • 1 tablespoon olive oil or butter
  • 1 tablespoon tomato paste (optional, for extra richness)
  • 1 teaspoon sugar (optional, to balance acidity)
  • 2 cups vegetable or chicken broth
  • Salt and pepper to taste
  • 1/2 cup cream or milk (optional, for creamy texture)
  • Fresh basil leaves or dried basil (optional, for garnish)

Instructions:

  • Prepare the Tomatoes:
    • If desired, blanch the tomatoes to remove the skin.
    • Boil water in a pot, score the tomatoes at the base and immerse them in boiling water for 30 seconds.
    • Transfer them to ice-cold water.
    • Peel the skin off and chop them roughly.
  • Sauté the Aromatics:
    • Heat olive oil or butter in a large pot over medium heat.
    • Add chopped onions and garlic.
    • Sauté until onions are translucent and garlic is fragrant, about 3-4 minutes.
  • Cook the Tomatoes:
    • Add the chopped tomatoes and tomato paste (if using).

  • Simmer the Soup:
    • Add vegetable or chicken broth to the pot.
    • Bring the mixture to a boil, then reduce the heat to low.

  • Blend the Soup:
    • Remove the pot from heat and let it cool slightly.
    • Use an immersion blender directly in the pot to blend the soup until smooth.
    • Alternatively, transfer the soup in batches to a blender and blend until smooth.
    • Be cautious when blending hot liquids.
  • Adjust Seasoning:
    • Return the blended soup to the pot (if using a blender) and place it over low heat.
    • Stir in sugar (if using), salt and pepper to taste.
    • Adjust the consistency by adding more broth if needed.
  • Add Cream (Optional):
    • If desired, stir in cream or milk to add a creamy texture to the soup.
    • Heat through gently, without boiling.
  • Serve:
    • Ladle the tomato soup into bowls.
    • Garnish with fresh basil leaves or dried basil.
    • Serve hot with crusty bread or croutons on the side.
