Mango Coconut Rice is a delicious and fragrant dish made with ripe mangoes, coconut milk and aromatic spices.

Here's how to prepare it:

Ingredients:

  • 1 cup basmati rice, washed and soaked for 30 minutes
  • 1 ripe mango, peeled, pitted and diced
  • 1 cup coconut milk
  • 1/2 cup water
  • 1 tablespoon oil or ghee
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1-2 green chilies, slit lengthwise (adjust to taste)
  • 1 teaspoon ginger paste
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  • Prepare the Rice:
    • Drain the soaked basmati rice and set it aside.
    • In a saucepan or rice cooker, add the rice along with 1 cup of coconut milk and 1/2 cup of water. Cook the rice until it's fluffy and tender. Once cooked, fluff the rice with a fork and set it aside.
  • Peel the ripe mango and cut it into small dice. Set aside.
  • Temper the Spices:
    • Heat oil or ghee in a large skillet or frying pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
    • Add slit green chilies and ginger paste to the pan. Sauté for a minute until the raw aroma of ginger disappears.
  • Add the diced mango to the pan. Sprinkle turmeric powder and salt over the mangoes. Gently mix everything together and cook for 2-3 minutes until the mangoes are slightly softened.
  • Add the cooked basmati rice to the pan with the mango mixture. Gently mix everything together until the mangoes are evenly distributed throughout the rice.
  • Garnish and Serve:
    • Garnish the Mango Coconut Rice with freshly chopped coriander leaves.
    • Serve the rice hot as a side dish or main course. It pairs well with yogurt, pickle, or any curry of your choice.

Additional Tips:

  • You can adjust the sweetness of the dish by using ripe mangoes that are either very sweet or slightly tart, depending on your preference.
  • For extra flavor, you can add some toasted cashews or almonds to the rice before serving.
  • Feel free to add other spices such as cinnamon, cloves, or cardamom for additional depth of flavor.
